环颈雉，俗称：野鸡。体长46～100cm，体重0.41～1.99kg。栖息于蔓生草莽的丘陵中。夏季繁殖期，可上迁高山坡处；冬季，迁至山脚草原及田野间。喜食谷类、浆果、种子和昆虫。善走而不能久飞。繁殖时，在灌木丛或草丛中的地面凹陷处营简单的巢，内铺落叶、枯草等。每窝产卵6～15个。肉味美。尾羽可作饰羽。分布于欧洲东南部、蒙古、朝鲜、俄罗斯东南部、中国、越南北部、缅甸北部等地。
Ring-necked Pheasant belongs to the order of Galliformes,commonly known as wild pheasant.The length of body is 46 ~ 100cm, the weight is 0.41 ~ 1.99 kg.Inhabited in the hilly hills.During the summer breeding season, they can be moved up.In winter, they move to the prairie and fields.Mainly lives on cereals, berries, seeds and insects.It is good at walking but not flying.When reproduction, a simple nest is built in the undergrowth or in the grass of the ground.There are six to fifteen eggs in each nest.Their meat is delicious.The feather of tail can be used for decoration.They are distributed in southeastern Europe, Mongolia, north Korea, southeastern Russia, China, northern Vietnam, northern myanmar, etc.

鸡，是人类饲养最为普遍的鸟禽类，也是与人类接触最近、且能吃人类给予食物的鸟类之一。家鸡源于野生的原鸡，驯化历史距今至少四千年了。
环颈雉，羽翼色彩丰富而华丽：头顶为棕褐色，眉纹为白色，眼睛周围裸露的皮肤为鲜红色，颈部大多为金属绿色且有一圈白色的环带，上体为紫红色，下背和腰多为蓝灰色，胸部为带紫的红铜色，腹部为黑绿色，尾羽为黄灰色且并排列有黑色的横斑……不用说环颈雉能吃多少昆虫；也不用说它们的肉质多么鲜美、多么容易饲养；只看这画一样的色彩，就够让眼睛放光的了。
环颈雉栖息于开阔的林地、灌木丛或农耕地。它们喜欢闲散地散步或扎在草堆里不动，虽属鸟类，除非万不得已，它们是不飞的，更不会游泳，是真正的“旱鸭子”。如遇紧急情况，它们也只不过飞出区区百八十米——准确地说，也不叫“飞”，只能叫“超低空滑翔”。
环颈雉兼具观赏、食用、药用的三重价值。羽毛可以做成精美的工艺品。古时候，还被织成罗、缎、锦，用作妇女衣裙。据殷商时代的甲骨文中记载，李时珍在《本草纲目》中对环颈雉的描述更为详细，他认为环颈雉肉性味甘、酸、温，具有补中益气之功；对下痢、消渴、小便频繁都有一定的疗效。环颈雉的肉质坚实，味道鲜美，蛋白质、氨基酸含量高于家鸡，脂肪和胆固醇含量却比家鸡低。从唐朝到清朝，一些宫廷食谱上，也记载了环颈雉的许多烹饪方法。
