鲟形目，鲟科，鲟亚科，鲟属。中华鲟生活于大江和近海中，是底层鱼类，具有洄游性或半洄游性。春夏季5-6月间喜群集于河口，秋季上溯而至江河之上游。中华鲟属于以动物性食物为主的杂食性鱼类，主要以一些小型的或行动迟缓的底栖动物为食，包括虾蟹、鱼类、软体动物和水生昆虫等。
