北方泥鳅又称鳅鱼，在分类上属鲤形目，泥鳅科，泥鳅属。主要分布于我国北方地区淡水的河流、沟渠、水田、池塘、湖泊等。北方泥鳅肉质细嫩，味道鲜美，有水中人参之美称，不但有较高的食用价值，而且还有很好的药用滋补功能，是较常见的淡水经济鱼类。
